Bread

I love bread!!! Of course I try not to eat too much, nor every day. However, I eat vegetarian most of the time and flatbread is the perfect accompaniment. I have experimented with all types of bread, and I always come back to that which is the most simple. One that I can make on the spot without worrying about planning hours before so it has time to rise.

Easy Flatbread

This one you can make on the spot, and it's made with flour and water like yeast-rising breads, yet it also includes yogurt. I thought this bread was a little heavy once I made my own sourdough bread, yet I came back to it for its simplicity. I've made variations of this bread, and here is one of the recipes, which is also used for Turkish Gozleme (bread with a filling)

Sourdough Starter (to use instead of yeast in bread)

I made my own starter for this one for two reasons: it sounded cool to make my own starter and keeping a live culture was supposed to be healthier for the digestive system and easier to tolerate for those who struggle with gluten. It takes a week or so to get the starter going, but you have to continually feed it with flour and water to keep it alive. I had it on my counter for a few months and then put it in the fridge to slow down its hunger. Unfortunately, I forgot to feed it once a week in the fridge. However, if I kept it on the counter, it ate up my flour like it was going out of style. If you want to try it yourself, here's a recipe:

Regular Yeast Bread

You can always make a bread recipe that uses regular yeast if you want. I just haven't always had much success with yeast envelopes I find in the grocery store. If this is the route you want to go, there are plenty of recipes out there. The most important thing is to not put yeast in water that is too hot - otherwise, you'll kill it.

Baking Bread

To make flatbread, use a hot, oiled, flat iron griddle, and roll the dough thin. Then cook it on each side till brown and cooked all the way through.

To make regular bread that needs to rise and looks like a round loaf of peasant bread, follow this recipe. All you need is a Dutch oven because it's all iron and has a top to it, which provides sufficient moisture for the bread and helps develop a hard crust.
